Rock star of the oolong (or wulong) world, Da Hong Pao is a great introduction to the Wuyi rock teas.

Oolong teas hailing from the Wuyi mountains in Fujian, China, are often talked about in terms of their “yanyun”, or “rock charm”. This description refers to that mineral base note common to all good rock oolongs, an aroma that is imparted by the volcanic rock and mineral rich soil of Wuyi. Da Hong Pao has a particularly alluring rock charm, which is nicely balanced by a sweet finish and wonderful floral notes.

Being one of China's most famous teas, Da Hong Pao's origins are inevitably shrouded in legend. This particular rock oolong is supposed to have cured the emperor's mother of an unknown ailment. To show his gratitude, the emperor sent four red robes to clothe the four responsible tea bushes, supplying the name “Da Hong Pao”, or “Big Red Robe”. Impressively, these four ancient bushes survive today and are the mother bushes of all modern Da Hong Pao tea leaves.

Brewing instructions
Western method: Use 3g per 200ml in 95°C water. Brew for 2 minutes. Re-infuse to taste.
Gong fu method: Use 5g per 100ml in 95°C water. Brew for 10 seconds. Add 5 seconds to each subsequent infusion.
