A geographical cousin of our Eight Immortals and Peach Flower oolongs, Phoenix Black is a rare treat from the Phoenix Mountain area of Guandong, China. Still a characteristic Dan Cong tea, Phoenix Black boasts a delicious darkness that is rare amongst Phoenix Mountain teas.

Phoenix Mountain is best known for its Dan Cong oolongs, which are characteristically fruity and brew to a beautiful golden liquor. Phoenix Black is made with the same “Dan Cong” leaves as the region's oolongs, meaning that the tea is grown on tall, semi-wild mountain tea trees. However, the leaves from these ancient trees are fully oxidised, imparting a deeper, dried fruit aroma to Phoenix Black.

Though darker than the Phoenix oolongs, Phoenix Black still brews to a golden liquor lighter than most black teas. It is a smooth, thick tasting brew with a hint of spicy fruit and a balanced, low malt sweetness.

Phoenix Black is a rare find and a great tea for anybody interested in a gentle black tea, or for those looking to further explore Phoenix Dan Congs.

Brewing instructions
Western method: Use 3g per 200ml in 95°C water. Brew for 1 minutes. Re-infuse to taste.
Gong fu method: Use 5g per 100ml in 95°C water. Brew for 10 seconds. Add 5 seconds to each subsequent infusion.
