Chinyonoen's Sencha is a classic Japanese green tea. Sencha, commonly juxtaposed with powdered matcha tea, is Japan's most popular tea. Japanese Sencha is also contrasted with Chinese green tea, being steamed, rather than fired, resulting in a more vegetal, grassy flavour than smokier Chinese greens.
Our Sencha is from Chinyonoen, a high altitude family tea farm in Fukuoka Prefecture, Southern Japan. Winter long snow cover and cool temperatures means that the tea is grown without pesticides. It also means that the first leaves are a little later in the year than those at lower altitude farms. These slow developing leaves are picked on precisely the 88th morning since Spring, ensuring the first flush young buds and leaves are at their most tender and sweet.

Western method: Use 2g per 200ml in 65-70°C water. Brew for 1 minute. Re-infuse to taste.
